PROSCIUTTO

is a dry cured ham which is made from a pig’s hind leg and thigh. After cleaning the leg, salt is applied heavily and left to cure in humidity and temperature controlled environment. The length of aging is at least 12 months and sometimes up to two years or more.

GENOA SALAMI

is a variety of salami commonly believed to have originated in the area of Genoa. It is normally made from pork, but may also contain veal. It is seasoned with garlic, salt, black and white peppercorns, and red or white wine. Like many Italian sausages, it has a characteristic of fermented flavor and can vary in spice levels.

SOPPRESSATA

is Italian dry cured salami. Typically Soppressata salami is made from the pork. Usually more coarsely ground than most salami, with big chunks of meat and fat visible, which make a very flavorful, cured meat.

3 YEAR AGED CHEDDAR

Three year aged cheddar is a sharp firm cheese with smoky aromas, the longer the age the sharper the flavour. Pairs nicely with any Riesling or hearty red wines.

STILTON BLUE CHEESE

Stilton cheese is an English style blue cheese with a strong almost spicy flavor and a smooth and semi firm texture. Pairs well with full body semi sweet red wines, nuts, or artisanal breads.

ST. MARYS STONETOWN GRAND TRUNK

Grand Trunk Cheese comes from Stonetown artisan cheese in Saint Mary’s, Ontario. Having a firm mild and creamy texture it pairs very well with lighter bodied red wines and fruit.
